About our company:
We run 2 Indian restaurants, in Lochem and Appingedam, which are small tourist town in remote area in Netherlands. Where we cook traditional Indian food for our customers. Where we use all the fresh ingredients for our dishes. From very small spice mix to the finished products all of them we make from fresh ingredients. Such techniques may require years of expertise and practice at a professional level. Nevertheless, we are willing to arrange systematic step by step training, so someone can perform according to the customer’s demand.
However, our work does not require hard labor, but he/she must need enough dedication, focus and expertise to create the test of Indian food. We are looking for someone who is willing to work on weekends and vacation periods, as a small tourist town these are the busiest time of the year.
Job description:
As a self-employed Indian cook, we like to perform you independently according to the menu. Usually on a busy night we make over 90 different dishes within 3 hours (between 5 to 8pm.). Along with that you also need to make early preparations for the rush hours, and very basic cleaning for end of the day.
In our menu we have over 70 different dishes (please visit: www.dekeukenvanindia.nl ), where all of them are cooked form fresh ingredients. Even some of the desserts and toppings are also needed to make from fresh ingredients. On the other hand, in a big restaurant, may every cooks only perform some tasks, but we run small restaurants with 40 to 60 seats, where every cooks must need to carry every stapes of preparation and cooking the food. So, you must have knowledge or need to learn (from training) every dish of our menu.
Experience and education:
Experience and education are not required for this position. But it will be an advantage because the Indian cooking style is very much different than the other European cooking. There are so many kinds of spices and herbs used compared to the European cooking. If you have no knowledge, no education and experience with any kind of professional kitchen, no problem, we will arrange 3/6 months of training for you. Which will be approximately over 300 hours of step-by-step training.
Training Description:
Please note that we are not a cooking training school, we run professional restaurants. So, our training will not cover enough theoretical knowledge, like, origin of the spices or their history, level of their nutrition, vitamins or minerals and different level of their allergic reaction to the humans body. Nevertheless, we will teach you the name of the spices and herbs, and how to use them according to their flavor and taste. However, must need to admit that the training we are offering it is only for someone who is highly committed to learn and gain expert knowledge on Indian cooking on professional level.
Our training will be mainly on a practical level, which will be around 300 hours. However, the training period will be fully paid according to the labor market of Netherlands of HOERCA CAO. After the successful training period, we are willing to offer you 2 years of work contract with € 3200 to €3600 gross per month.
As a professional restaurant, we can only arrange 15 to 20 hours of training per week under the supervision of our owner. Which will be divided into 3 steps. After every step we will evaluate and proceed farther.
Step 1
In this step we will introduce you with a wide range of India spices and herbs, in our restaurant we use more than 30 different kinds of them. From these spices and herbs, we make more than 12 different kinds of spice mix for final cooking and toppings. In this period, we also teach you how to take the core preparation, for curry’s, biryani, grills, starters, salades, desserts and decoration. We will use approximately 80 hours for that.
Step 2
In this step we will teach you all our dishes (which are around 70 of them). In this step you will also learn how to cook them with different fresh products, with their different cooking temperature and technique. In this step we will use approximately 150 hours.
Step 3
Finally, in this step, we will let you cook for our customers. At the beginning in the quite day for 50 to 60 hours. At the end we will let you cook at the weekend in rush hours for 50 to 60 hours.
